Keto Week 9: 2 Month Ketoversary!
Isn’t funny how time flies when you’re having fun? I was checking MyFitnessPal for progress update pics (which I won’t be sharing because they are pictures of me in my undies, and nobody needs to see that!) when I realized that yesterday, the 20th, was my two month Keto anniversary, or Ketoversary as I like to call it!
Here’s a recap from Last Week, Week 8:
Pounds Lost: 5.4
Total Pounds Lost: 26.8
That was a great week for me losing weight, but I know it’s not going to happen that quickly all the time. For example, this week did not show the same results, but as I was disappointed when I got on the scale this week, I remembered that I have only been doing this for 2 months and have, in total, seen a great loss, even with my 2 week stall from vacation! That makes me very happy! Plus my clothes are getting big, so I’m also happy about that!
I have had some trouble with recipe boredom, but we did a few new things this week which I loved:
I whipped this up by using Rao’s Marinara sauce, which I was craving. I put herbs in it and then added ground beef. While the beef was browning, I cored zucchini and steamed them in the oven. Then I loaded up the boats, sprinkled cheese on them, and put them back in the oven to melt the cheese. So easy and so good!
This Antipasta Salad from Creno’s Pizza here in town was amazing! I’ve never been a huge fan of Italian dressing, but this one is incredible!

Seard Scallops in Buttered Bacon Sauce
This recipe comes from Julia, who has quite a few Keto options! I would suggest adding a little less lemon juice and a little more white wine next time. Also, I ate 2 servings. I love scallops, especially when there is bacon involved!! We cooked this bacon on the stovetop, and I used this splatter screen. I don’t know how we did it before!
